FWIW I do not think 4N is 3 suit takeout, it's 2 places to play, so I will never play hearts when it's right. Still, it's much preferable to doubling.

I started to bid 4Nt, then wondered if that would greatly increase our chances of playing the hand in Opener's minor suit (say Diamonds). Is the Heart fit really a given --enough so that 5H is safer?

Bidding 4NT doesn't commit you to playing in diamonds. If partner bids 5, you can bid 5 with more certainty of having a fit there. If he bids 5, passing will probably work OK even if you are playing in opener's suit - at least you have a 9-card fit.
... that would still not be conclusive proof, before someone wants to explain that to me as well as if I was a 5 year-old. - gwnn
