Opening leads have always been the weakest part of my game... Can someone explain this one to me?

What's to explain? From Gib's point of view, declarer is always going to drop its stiff offside K if it is offside. So it's a "safe" lead. It didn't want to lead away from a jack.

To change this you have to fundamentally change GIB to base its decisions on the opps playing single dummy instead of double dummy. This takes a lot more processing, don't know how feasible it is.

As it turns out declarer was always going to pick up the suit anyway, so it didn't lose anything.
