A supplement to my comment, first, if your hand is notbalanced, be sure that the opponents’ handis also unbalanced.
Secondly, how does East-West reach to 7NT:
East opens onediamond. East’s hand is too strong forpreemptive.
South bids four clubs,West bids Double North – Pass, East 4 diamonds and West bids 7NT.
How do you bid this 2/1 ACBL

More like 5♦ 6♦ here if I am responder playing with a new player, though not surprised to see some tables go 5♦ 7♦ given that six card suit w AK and those entries with the hope that the leader dont have the ace and the suit be good.

You're of course right if North attacks with a club. Due lack of entries to East's hand.
All different lead E-W make the 7NT contract.
But, this is the only lead, a club, that North must lead since South bid 4 ♣

I honestly think anything other than a 5♦ opening bid is resulting. You have a good 9-card suit and the minority of the points. It's also descriptive. 3♦ is obviously completely absurd, as is 2♣ while 1♦ is 'only' wrong.
