Yep. It only works with split range, I think. With wide range or decent hand plus it is different. On split range, the hand with just extra shape would be so bad it couldn't bid again for the five level
Even if you DO play split range I would expect a 5C bid to be a weak 5-7, not a strong 5-5. I've never really considered what the difference between X and 4N is to show the strong rebid.
(I voted 2S-then-4NT, just because I know partner will bid if I kick him hard enough, but I am by no means certain that either action is right.)

5♣x-3 was not a good score, even though not everyone took their 4 top tricks against 4♠.

I know it's a good idea to double if you have 0355 and they opened 1S but that's a little different since it's an unbid major that we're implying by the double.
Playing specific two-suiters, I would be much more likely to make my two-suited bid - firstly (and obviously) because partner is better placed knowing both of my suits, and secondly because I can sometimes bid my three-card fragment on the next round. Whether the second point is relevant depends on the strength of the hand and the order of the suits.

Do you really expect a 5-7 distribution? Opposite a 5-6 I'd rather play in the 5-4♥ fit than the 6-3 ♣ fit...

Dbl + dbl is ok as well. Obscures the distribution a bit, but scores if pard has some diamonds.

When a bid promises a 5-card minor, a 6-card minor is considered extra length.
